    Whiskey Espresso Brownies, with yum does it get any better than that! building layers of flavor. Whiskey is very sweet and pairs extreamly well with the bitterness of espresso powder and the bittersweet chocolate chips. I tend to use Four Roses for everything because I figure if it tastes amazing and is very drinkable then its very good to use in cooking, baking and marinating!

    Ingredients

    3/4 cup heavy cream

    1/4 cup whiskey

    1 cup bittersweet chocolate chips

    espresso whip cream

    2 cups heavy cream

    1/4 cup espresso powder

    3/4 cup granulated sugar

    1 cup butter

    5 oz bittersweet chocolate chips

    1/4 cup cocoa powder

    2 cups sugar

    3 eggs

    1 1/4 cup flour

    1 tablesppon vanilla

    1/2 cup whiskey

    4 tablespoons espresso powder

    Instructions

    whiskey espresso ganache: place bittersweet chocolate chips in a bowl, in a small saucepan boil cream and whiskey. Whisk in espresso powder. Pour over bittersweet chocolate chips whisk until completely melted it will be very shiny. Let cool cover with plastic, set aside.

    Place whip cream, sugar and espresso powder in a mixing bowl, use whisk attachment, mix until stiff, refrigerate. ****please note you can add whiskey to whip cream but the alcohol will not be cooked out!

    In a medium-large saucepan, melt the butter with the unsweetened chocolate over low heat, whisking occasionally until smooth and melted. Sprinkle in cocoa powder and whisk to combine. Remove the pan from heat and allow to cool slightly. Stir in sugar and vanilla, whiskey and espresso powder. One at a time, whisk in the eggs. Stir in the flour

    Pour batter into a greased 8 x 8 (thicker) or 9 x 13 (thinner) baking pan. Spread to even out the top and place in the oven.

    Bake for 35 minutes, then check the brownies with a toothpick. If it is not done  return to the oven for 5 to 10 more minutes remember if you want them fudgy they will be soft and as they cool they will set.

    After brownie have cooled completely take them out of the pan flip upside down and frost the bottom. you might find this is easier to take them out of the pan and frost them if they are slightly or completely frozen.

    remember when frosting anything frozen you frosting or gauche id going to set fast. After it has set cut brownies in desired shape and top with espresso whip cream!

    Brussels Sprouts Breakfast

    Brussels Sprouts Breakfast is probably not the first thing that comes to mind when you think go breakfast. This is a really great way to use them for something other than a side dish. We use bacon in this recipe you could also substitute panchetta or you could leave the meat out and it would be gluten free and vegetation. You could also add parmesan or another kind of cheese. We are leaving it fairly simple this time!

    But so so good another thing is I’m kinda in love with purple potatoes right now but you can use any kind. Also I’m using a small cast iron but you can use a larger one if you have more people to eat, you can use any kind of pan even a sheet pan if you want to make the entire thing in the oven you can also do that.

    Brussels Sprouts Breakfast

    Ingredients

    2 eggs

    1 cup brussels sprouts

    1 cup purple potatoes

    1 teaspoon garlic

    1/4 cup onion or 2 tablespoons of chives

    2 slices bacon

    1 sprig fresh thyme

    sea salt

    fresh ground pepper

    1 tablespoon maple syrup

    1 tablespoon dijon mustard

    Instructions

    Chop your potatoes and Brussel sprouts. Heat your small cast iron pan. Cut bacon unto 2 inch pieces cook in cast iron pan remove bacon, at this point if your not using bacon you can use olive oil or butter. Sauté potatoes and onions season with salt pepper garlic and thyme 7 minutes. In a separate bowl toss brussel sprouts with mustard and maple, add them to the potatoes cook about 5 to 7 minutes they will caramelize. Add bacon back in sauté eveything together. Next make 2 wells in your sauté and crack your eggs right in them. Cook your eggs to how you like them you pan also put them in the oven if you would like or finish them stovetop.

    Watermelon Feta Bites is such a great summer appetizer. Watermelon Feta Bites is one of our most popular appetizers for weddings and summer parties because its so refreshing. Its also vegetarian. We make it all year long but its very popular during the summer time because its hot outside!

    In the photos we cut the watermelon in circles but you can cut it in any shape that you want you can also cut it in small wedges or make a salad out if it. you can use the leftover peices if you use a cutter for your favorite watermelon drink! and I know some people also make vinegar with the watermelon rind.     Watermelon Feta Bites

    Refreshing Summer Appetizer

    Ingredients

    1 small seedless watermelon

    1/2 cup lime juice

    1/2 cup honey

    1 bunch fresh mint

    1 cut feta cheese

    Instructions

    Peel watermelon, slice watermelon diagonally in 1 inch slices then use your cutter to cut them unto the desired shape. Next in a small bowl whisk together the lime and the honey and pour over your shapes allow to sit at least 30 minutes, essentially your maranating it. You can leave it there longer but I would not recomend more than 4 hours because the lime will break down the watermelon. Remove from marinade put on dry area, whatever your going to serve it on put the mint leaves on top of the watermelon and the feta on top of that! Enjoy! This is a party favorite!

    Strawberry Champagne Jam

    Strawberry Champagne Jam! well I know many people don’t eat bread anymore and thats ok I don’t judge, I happen to love it with a passion! but for those of you that don’t eat it here are some other amazing ideas you can do with this jam. You can put it in cute little jars and give it away as a thank you or as a gift, stickers, fabric or just in cute little jars. This is also amazing as ice cream topping yum! or you can use it as cake filling and you can even fold in whip cream (whipped) and you have amazing Strawberry Champagne mousse that you can eat with more fresh strawberries on top or you can make a cake and fill it with the mousse. One of my most popular wedding cake flavors in pink champagne cake with strawberry mousse. AND BONUS you will have extra pink champagne so you can make a cake or you can have a glass of pink champagne. If you don’t like Champagne its not a super strong flavor in this jam recipe. You can also use water in place of it. Don’t forget you can also use it on scones!

    Strawberry Champagne Jam

    Champagne strawberry jam

    Ingredients

    8 cups strawberries, washed and chopped

    1 1/2 cups water

    7 cups sugar

    1 cup Champagne (I use pink) any kind

    1 -3oz liquid pectin

    1/2 vanilla bean or 1 teaspoon vanilla bean paste (optional

    1 tsp lemon zest (optional)

    Instructions

    Wash and de-stem  strawberries. You will need a heavy bottom pot at least 8qt size. You can chop you strawberries,  if there small leave them whole, if you would like smoother jam you can also blend them in a blender. Next wait for them to boil stir occasionally. Add all of the sugar at one time stir until disolved and return to a full rolling boil (this means when you stir id it still boils:) Boil 1 full minute. In a seperate bowl wisk champagne and liquid pectin you will notice it gets thick right away. Add pectin champagne mixture to jam return heat to low cook one additional minute and DONE! Fill your favorite jars with hot jam! at this point you can boil them for 10 minutes to finish the process

    Brine is an essential part of making your meat or poultry moist.You can play with this recipe you can use beer or wine, juice  in place of water, or do half and half water. Also if there is a certain herb flavor your looking for you may add that as well fresh or dried. I like to keep this very light in flavor so you can add whatever you want to it. Do not leave chicken breast in brine overnight in fridge but you can leave whole birds in the brine overnight. Smaller cuts of meat may become to salty. Generally I leave cut chicken ,or pork 2-4 hours. This brine is very versatile you can rinse off the brine and cook it litterally anyway you like. And it will be very moist. You will also notice your meat may become firm thats ok it’s supposed to do that.

    Instructions

    Boil all ingredients together. Cool all the way before adding your meat, I prefer to use zip lock bags to put it in after its cool.

    It’s officially fresh lavender season where you can literally go out and get fresh beautiful lavender from the farm so that’s what I did. We have a wedding coming up with some lavender in the ingredients, so this is a perfect opertunity to make some amazing things with fresh lavender! And who doesn’t love lavender and lemonade yum! so refreshing and not something you get to have all the time. This recipe you can make as just lemonade BUT we prefure it with vodka!

    Ingredients

    Lavender Lemonade Cocktail

    Can also be made without alcohol

    Lavender simple syrup

    1cup sugar

    1cup water

    1 tablespoon fresh or dried lavender

    1 small squeeze lemon(keeps the sugar from crystalizing)

    Lavender ice cubes (optional)

    Water

    Lemon zest

    Lavender

    Lemonade

    1 cup water

    1 cup lemon juice (fresh squeezed)

    2 oz vodka per glass

    Instructions

    Make lavender simple syrup by adding all of the ingredients to a pot and boil until the bubbles become clear. Cool completely. Then strain out lavender if you like.

    To make lavender ice cubes

    I use the flex ice cube trays but you can use any kind or shape and again fresh or dried lavender. The lavender will float to the top if using square cubes I use a price of way paper over the tray so it doesn’t pop out the top. Mix water and lemon zest pour over lavender.

    Next take the cooled simple syrup, lemon juice and water mix together. At this point there are a few options! Put it in a pitcher then you can enjoy or put it in a shaker with 2oz of your favorite vodka and pour unto your favorite glass or Pint Jar!

    Strawberry Chicken

    Strawberry Chicken! This chicken is marinated in a strawberry balsamic marinade, grilled on a grill! and finished with balsamic syrup and fresh strawberries with basil.

    Ingredients

    Balsamic marinade

    1 cup fresh strawberry

    1/2 cup balsamic vinegar

    1 Tablespoon brown sugar

    1/2 cup olive oil

    1 tsp sea salt

    1 tsp pepper

    1 tsp garlic

    4 peices of chicken you can use any kind of chicken it doesn’t have to be chicken breast

    1 bunch basil

    1 cup fresh strawberries

    Balsamic Glaze (for drizziling you can buy balsamic syrup at most grocery stores)

    if you want to make it  It only takes 15 minutes and it’s much healthier than buying it from the store (which usually has unnecessary stabilizers, emulsifiers and chemical colorings).

    1 cup balsamic vinegar

    1 tablespoon honey

    Instructions

    Blend all of marinade in blender place chicken in a zip lock marinade at least 4 hours or overnight.

    Heat grill, cook 25 minutes depending on what kind of chicken you have.

    Balsamic glaze

    Add the balsamic vinegar and honey to a small pot. Bring it to a boil, then reduce the heat and simmer for 10-15 minutes or until the sauce coats the back of a spoon.

    refrigerate after use sauce will thicken as it cools.

    A little bit goes a long ways drizzle over cooked chicken

    dice strawberries and basil fold together and put on top of the chicken!

    Yum so good!

    Notes

    You can also use your favorite balsamic vinaigrette and just add strawberries for the marinade. This can also be baked 400 25 minutes. But I enjoy the smokey flavor from the grill.

    1 cup cooked quinoa

    1/2 cup fresh sliced strawberries

    1 scoop yogurt

    1 tablespoon of honey

    1/8 cup nuts or seeds

    Instructions

    Cook and cool quinoa the ratio is two to one, one cup quinoa 2 cups water boil water stir in quinoa turn down heat cover cook about 11 minutes, transfer unto large bowl and let cool completely.

    Slice strawberries,chop nuts if desired. In your favorite bowl put quinoa strawberries yogurt and nuts you can also layer the entire bowl if you wish. And last drizzel with your favorite honey. I also like a side if coconut milk!

    The Perfect nut bars are so versatile, you can cut them in different shapes. Also you can bake this recipe as a pie or baby tarts instead of in a sheet. We like using Macadamia nuts but any nuts will be yummy. You can also drizzle in chocolate or add Kailua. The filling can also be kept in the fridge for later baking.

    Ingredients

    1 pound butter

    1 pound brown sugar

    12 oz honey

    1/4 cup sugar

    2 1/2 pounds chopped nuts,any kind

    4 oz cream

    1 -1/2 sheet pan baked pie dough shell, tart shells or pie shell.

    Instructions

    Bake pie shell make sure that the dough goes up the sides so the batter doesn’t leak underneath.

    Place all ingredients except cream and nuts unto a heavy bottom sauce pan. Bring to a full boil stir for 3 minutes. Turn off stove whisk in cream ( make sure you have room in your pan because it will bubble up slightly) and stir in nuts. Pour unto pie shell. Bake in oven at 375 until it bubbles, Let cool completely.

    Ingredients

    6 Large or 12 small apples or 16 mini apples
    2 cups heavy cream
    2 cups sugar
    1/4 cup unsalted butter
    1/2 cup corn syrup (clear one)
    Sticks

    Instructions

    Wash apples,take out stems and place sticks. Place cream,butter,sugar, and corn syrup in a heavy bottom saucepan. Bring to a boil use a larger pot rather than a smaller one on medium heat boil until candy thermometer reaches 245 10-12 minutes. Shock in ice water and dip apples. When your dipping the apples if the caramel is still to hot it will not coat properly, and cook them we don’t want that! Place apples on parchment paper. at this time if you want to roll them in nuts, or sprinkes you would want to do that before they dry.
