4 Tostada shells fried or purchased
2 cups prepared beans
1 large sweet potatoe
1/2 cup queso fresco
1/4 cup chopped cilantro
1/2 teaspoon garlic
1/2 teaspoon cumin
1/2 teaspoon fresh jalapeño
Seperate beans in half mash half and the other half will be sautéed with the sweet potatoes. Next we will cook sweet potatoes until fully cooked. Sauté black beans, sweet potatoes, cilantro, garlic, cumin and jalapeño together until fragrant. Next on each tostada spread refried beans then top that with the black bean sweet potato mixture, followed by the avacado and queso, add egg to top!
if you are going to make your own tostada shells do that first. Take corn tortillas and fry 10 -15 seconds in really hot oil.
