    Cedar Salmon with Lemon Smoked Salt Butter! Here in the Northwest I do a lot of Cedar Salmon at weddings. We grill the salmon on site and it is really amazing. We use fresh Salmon and Cedar. Ideally Sockeye or King salmon is best when available but you can use any kind we generally use. Sockeye salmon, also called red salmon, kokanee salmon, or blueback salmon, is an anadromous species of salmon found in the Northern Pacific Ocean and rivers discharging into it. Alaska Salmon is also quite amazing.

    Here are some questions people ask me. Do we soak the Cedar ? Actually no we do not, does that cause the cedar to cetch in fire, yes sometimes they do you just move them out of the flames, This is ok because its so much more flavor. I’m sure its a personal preference but really it is much better if you don’t soak them in this application. Like I said we do this at weddings all the time and people are amazed by the flavor and the secret is its simple, leave it alone. Let the Fish be a Fish!

    I’m going to share with you our very simple recipe here. We use salmon skin on and we cut in in portions before putting it on the Cedar. The skin will stick to the cedar when you take it off and that is ok.

    Ingredients

    4 pieces salmon 6-8 oz skin on

    1-2 cedar plank

    smoked salt and peper

    Lemon Smoked Salt Butter

    1 cup butter room temperature

    1 tsp smoked salt

    1 tsp fresh ground pepper

    1 tablespoon fresh lemon zest

    2 teaspoons fresh minced garlic

    Instructions

    On a hot gas or charcoal grill place your cedar and seasoned salmon skin side down. Cook 8-11 minutes remove from heat. In a separate bowl mix together all of the Lemon Smoked Salt Butter ingredients. When fish comes off the grill top with butter at will be melting and make a beautiful sauce. You can garnish with fresh lemon wheel twist if you would like.

    Peach Chipotle Grilled Pork

    Peach Chipotle Grilled Pork is a favorite both at events and at home. Its very easy to make and is just a few ingredients. If you would like to use dried chipotle then you can boil a cup of water drop in the chilies until they are soft you can either use them whole or put them in a blender. Chipotle has a very smokey flavor we also use smoked salt. You can find smoked salt at your local grocery store usually in the gourmet section, cheese section or near the meat department or online. Peaches are a great fruit for grilling we sliced these but you can also just cut them in half and grill them that way as well. Peach Chipotle Grilled Pork is something easy to make on any night of the week!     Ingredients

    4 pork chops

    2 peaches

    1/2 cup chipotle dried or canned

    1 tablespoon honey

    Smoked salt

    Pepper

    Instructions

    Salt and pepper your pork chops, Heat grill, slightly oil grill, cut peaches. First start to grill your pork chops. when they are about 5 minutes away from being done grill peaches, drizzel peaches with honey lay them on top of each pork chop put a small amount of chilies on each one smother them together it will make its own sauce.     Strawberry Chicken

    Strawberry Chicken! This chicken is marinated in a strawberry balsamic marinade, grilled on a grill! and finished with balsamic syrup and fresh strawberries with basil.

    Ingredients

    Balsamic marinade

    1 cup fresh strawberry

    1/2 cup balsamic vinegar

    1 Tablespoon brown sugar

    1/2 cup olive oil

    1 tsp sea salt

    1 tsp pepper

    1 tsp garlic

    4 peices of chicken you can use any kind of chicken it doesn’t have to be chicken breast

    1 bunch basil

    1 cup fresh strawberries

    Balsamic Glaze (for drizziling you can buy balsamic syrup at most grocery stores)

    if you want to make it  It only takes 15 minutes and it’s much healthier than buying it from the store (which usually has unnecessary stabilizers, emulsifiers and chemical colorings).

    1 cup balsamic vinegar

    1 tablespoon honey

    Instructions

    Blend all of marinade in blender place chicken in a zip lock marinade at least 4 hours or overnight.

    Heat grill, cook 25 minutes depending on what kind of chicken you have.

    Balsamic glaze

    Add the balsamic vinegar and honey to a small pot. Bring it to a boil, then reduce the heat and simmer for 10-15 minutes or until the sauce coats the back of a spoon.

    refrigerate after use sauce will thicken as it cools.

    A little bit goes a long ways drizzle over cooked chicken

    dice strawberries and basil fold together and put on top of the chicken!

    Yum so good!

    Notes

    You can also use your favorite balsamic vinaigrette and just add strawberries for the marinade. This can also be baked 400 25 minutes. But I enjoy the smokey flavor from the grill.
