    Breakfast Tostadas

    There is nothing better than  really good Breakfast Tostadas. This is an great recipe thats quick and easy to put together of course you can always add and subtract the things you love and don’t like as much! Breakfast is one of those things that people just get in the routine of making the same thing over and over this is a good way to change it up. I really hope you enjoy your breakfast!

    Breakfast Tostadas
    Mash the beans together with a spoon and 1 tablespoon of the liquid.

    Sauté sweet potatoes until cooked.

    Ingredients

    4 Tostada shells fried or purchased

    2 cups prepared beans

    1 large sweet potatoe

    1 avocado

    1/2 cup queso fresco

    4 eggs

    1/4 cup chopped cilantro

    1/2 teaspoon garlic

    1/2 teaspoon cumin

    1/2 teaspoon fresh jalapeño

    Instructions

    Seperate beans in half mash half and the other half will be sautéed with the sweet potatoes. Next we will cook sweet potatoes until fully cooked. Sauté black beans, sweet potatoes, cilantro, garlic, cumin and jalapeño together until fragrant. Next on each tostada spread refried beans then top that with the black bean sweet potato mixture, followed by the avacado and queso, add egg to top!

    Notes

    if you are going to make your own tostada shells do that first. Take corn tortillas and fry 10 -15 seconds in really hot oil.

    Peach Chipotle Grilled Pork is a favorite both at events and at home. Its very easy to make and is just a few ingredients. If you would like to use dried chipotle then you can boil a cup of water drop in the chilies until they are soft you can either use them whole or put them in a blender. Chipotle has a very smokey flavor we also use smoked salt. You can find smoked salt at your local grocery store usually in the gourmet section, cheese section or near the meat department or online. Peaches are a great fruit for grilling we sliced these but you can also just cut them in half and grill them that way as well. Peach Chipotle Grilled Pork is something easy to make on any night of the week!     Salt and pepper your pork chops, Heat grill, slightly oil grill, cut peaches. First start to grill your pork chops. when they are about 5 minutes away from being done grill peaches, drizzel peaches with honey lay them on top of each pork chop put a small amount of chilies on each one smother them together it will make its own sauce.     Peach Ginger Smash! what an amazing yummy summertime cocktail! great for any occasion day drinking or whatever really its so good! Summer peaches are defiantly the star ingredient! We use ginger liquor but you can use ginger simple syrup by boiling 1 cup sugar 1 cup water and a 1 inch piece if ginger boil cool and strain.

    1 Peach

    1/2 oz  ginger liquor (can use fresh ginger simple syrup if not available )

    1 oz peach liquor

    2 oz gin

    Sprite

    Tall glass

    1/2 Lime

    Instructions

    Cut peach in half muddle half and the other half slice keep the seed if you want for garnish.

    Add remaining ingredients except sprite. Shake all together with ice all ingredients go unto glass top off with sprite. Add your sliced peach to the top.

    Quick Peanut butter banana frozen yogurt is a dessert that you probably have everything in your house already to make it. And there is a few variations and it will still taste just as amazing! If you are not a fan of banana you can actually leave that out. We added chocolate chips if you want to add them you can. It freezes fairly quickly. You could also add it to popsicle molds.

    1/4 cup buttermilk

    Easy English muffins really they are so good and not much effort really!

    you can make your english muffins any size we use the mini cutters for breakfast appetizers like mini egg and cheese.

    add your flour and salt to the wet ingredients

    mix with dough hook 6 minutes it will start to come away from the bowl. From here let rise 1 hour!
    line sheet pan with parchment sprinkle with cornmeal.
    Press dough to 1/2 inch thick flip over. Remember it is going to rise again!

     

    this recipe makes 9 regular size English muffins let rise 30 min.
    first 15 min go baking they will be slightly round but they will flatten out
    you can see when you turn them over they will be a really great color.

    2¼ cups bread flour

    ½ tablespoon  granulated sugar

    1 tablespoon honey

    ¾ teaspoon salt

    1¼ teaspoons instant yeast

    1 tablespoon unsalted butter, at room temperature

    1 cup  milk or buttermilk, warmed

    Cornmeal for dusting pan

    Instructions

    Pre- heat over to 350.Warm milk to lukewarm this means when you touch it its neither hot or cold. Whisk in yeast, sugar and honey. Next add the butter and the salt and flour mix with dough hook 6 minutes or by hand for 6 minutes.Cover let rise 1 hour should be doubled in bulk. On a sheet pan line with parchment then sprinkle with cornmeal. Take dough out of bowl and go strait on cornmeal press or roll out to about 1/2 inch thickness. Cut with desired shape. Cover 30 minutes let rise again. Place  in pre-heated oven 15 minutes take out of oven turn over back in oven for 30 minutes. Enjoy!

    Rose Petal Paloma

    Rose Petal Paloma I do love this drink! Pretty pink and roses! And the antique glasses always make everything taste so old fashioned fancy! These glasses were my grandmothers and we Love to use them for our parties at home, we do have a lot of parties during our off season. In this recipe I use rose petal simple syrup but if you don’t want to go to all the trouble of making simple syrup you can always substitute 2 tablespoons of rose water. You can also make rose petal ice cubes if you don’t want the actual rose petal on you drink. Grapefruit soda you can buy all kinds of now so fun! Their are so many great tequila drinks that get overlooked I personally like silver tequilla but you can use any kind you like.

    Whiskey Espresso Brownies, with yum does it get any better than that! building layers of flavor. Whiskey is very sweet and pairs extreamly well with the bitterness of espresso powder and the bittersweet chocolate chips. I tend to use Four Roses for everything because I figure if it tastes amazing and is very drinkable then its very good to use in cooking, baking and marinating!

    Ingredients

    3/4 cup heavy cream

    1/4 cup whiskey

    1 cup bittersweet chocolate chips

    espresso whip cream

    2 cups heavy cream

    1/4 cup espresso powder

    3/4 cup granulated sugar

    1 cup butter

    5 oz bittersweet chocolate chips

    1/4 cup cocoa powder

    2 cups sugar

    3 eggs

    1 1/4 cup flour

    1 tablesppon vanilla

    1/2 cup whiskey

    4 tablespoons espresso powder

    Instructions

    whiskey espresso ganache: place bittersweet chocolate chips in a bowl, in a small saucepan boil cream and whiskey. Whisk in espresso powder. Pour over bittersweet chocolate chips whisk until completely melted it will be very shiny. Let cool cover with plastic, set aside.

    Place whip cream, sugar and espresso powder in a mixing bowl, use whisk attachment, mix until stiff, refrigerate. ****please note you can add whiskey to whip cream but the alcohol will not be cooked out!

    In a medium-large saucepan, melt the butter with the unsweetened chocolate over low heat, whisking occasionally until smooth and melted. Sprinkle in cocoa powder and whisk to combine. Remove the pan from heat and allow to cool slightly. Stir in sugar and vanilla, whiskey and espresso powder. One at a time, whisk in the eggs. Stir in the flour

    Pour batter into a greased 8 x 8 (thicker) or 9 x 13 (thinner) baking pan. Spread to even out the top and place in the oven.

    Bake for 35 minutes, then check the brownies with a toothpick. If it is not done  return to the oven for 5 to 10 more minutes remember if you want them fudgy they will be soft and as they cool they will set.

    After brownie have cooled completely take them out of the pan flip upside down and frost the bottom. you might find this is easier to take them out of the pan and frost them if they are slightly or completely frozen.

    remember when frosting anything frozen you frosting or gauche id going to set fast. After it has set cut brownies in desired shape and top with espresso whip cream!

    Brussels Sprouts Breakfast

    Brussels Sprouts Breakfast is probably not the first thing that comes to mind when you think go breakfast. This is a really great way to use them for something other than a side dish. We use bacon in this recipe you could also substitute panchetta or you could leave the meat out and it would be gluten free and vegetation. You could also add parmesan or another kind of cheese. We are leaving it fairly simple this time!

    But so so good another thing is I’m kinda in love with purple potatoes right now but you can use any kind. Also I’m using a small cast iron but you can use a larger one if you have more people to eat, you can use any kind of pan even a sheet pan if you want to make the entire thing in the oven you can also do that.

    Ingredients

    2 eggs

    1 cup brussels sprouts

    1 cup purple potatoes

    1 teaspoon garlic

    1/4 cup onion or 2 tablespoons of chives

    2 slices bacon

    1 sprig fresh thyme

    sea salt

    fresh ground pepper

    1 tablespoon maple syrup

    1 tablespoon dijon mustard

    Instructions

    Chop your potatoes and Brussel sprouts. Heat your small cast iron pan. Cut bacon unto 2 inch pieces cook in cast iron pan remove bacon, at this point if your not using bacon you can use olive oil or butter. Sauté potatoes and onions season with salt pepper garlic and thyme 7 minutes. In a separate bowl toss brussel sprouts with mustard and maple, add them to the potatoes cook about 5 to 7 minutes they will caramelize. Add bacon back in sauté eveything together. Next make 2 wells in your sauté and crack your eggs right in them. Cook your eggs to how you like them you pan also put them in the oven if you would like or finish them stovetop.

    Watermelon Feta Bites is such a great summer appetizer. Watermelon Feta Bites is one of our most popular appetizers for weddings and summer parties because its so refreshing. Its also vegetarian. We make it all year long but its very popular during the summer time because its hot outside!

    In the photos we cut the watermelon in circles but you can cut it in any shape that you want you can also cut it in small wedges or make a salad out if it. you can use the leftover peices if you use a cutter for your favorite watermelon drink! and I know some people also make vinegar with the watermelon rind.     Ingredients

    1 small seedless watermelon

    1/2 cup lime juice

    1/2 cup honey

    1 bunch fresh mint

    1 cut feta cheese

    Instructions

    Peel watermelon, slice watermelon diagonally in 1 inch slices then use your cutter to cut them unto the desired shape. Next in a small bowl whisk together the lime and the honey and pour over your shapes allow to sit at least 30 minutes, essentially your maranating it. You can leave it there longer but I would not recomend more than 4 hours because the lime will break down the watermelon. Remove from marinade put on dry area, whatever your going to serve it on put the mint leaves on top of the watermelon and the feta on top of that! Enjoy! This is a party favorite!
