Champagne strawberry jam



8 cups strawberries, washed and chopped

1 1/2 cups water

7 cups sugar

1 cup Champagne (I use pink) any kind

13oz liquid pectin

1/2 vanilla bean or 1 teaspoon vanilla bean paste (optional

1 tsp lemon zest (optional)


Wash and de-stem  strawberries. You will need a heavy bottom pot at least 8qt size. You can chop you strawberries,  if there small leave them whole, if you would like smoother jam you can also blend them in a blender. Next wait for them to boil stir occasionally. Add all of the sugar at one time stir until disolved and return to a full rolling boil (this means when you stir id it still boils:) Boil 1 full minute. In a seperate bowl wisk champagne and liquid pectin you will notice it gets thick right away. Add pectin champagne mixture to jam return heat to low cook one additional minute and DONE! Fill your favorite jars with hot jam! at this point you can boil them for 10 minutes to finish the process


makes 12 half pint jars and 4-Pint Jars
