    Spicy Pineapple Shrimp Skewers

    Spicy Pineapple Shrimp Skewers are a wonderful appetizer you can also serve them as an entree. Everyone will love being outside to grill! This is a good balance of sweet and spicy. And really grilled pineapple is so amazing anytime of year if you find its too tart you can always soak in in salt water for about 10 minutes. Pineapple is usually available year round ay the store.

    Pineapples were spread around South America by the natives of Brazil and Paraguay and it eventually reached the Caribbean, Central America, and Mexico, where it was cultivated by the Mayas and the Aztecs. Columbus came across pineapple on the Island of Guadeloupe in the late 1400’s and its also said that Marco Polo reported many Chinese markets had Shrimp in abundance as early as 1280. However in Louisiana it wasn’t harvested until  the 17th century by hand!  The first mecanical shrimping was not available until 1917.

    Ingredients

    1 pineapple

    1 red onion

    1 red pepper

    18 large shrimp (I used 16/20 size)

    1 cup oil

    1 jalapeño

    1 tablespoon salt

    1/2 cup honey

    1 tablespoon lime zest

    1 lime

    1/2 cup cilantro

    Instructions

    Cup pineapple I leave the skin on for presentation purposes but you don’t have to. Cut the peppers and red onion is squares set aside.  You will need 2 bowls  non-reactive because you marinade the shrimp and the other half will be for brushing once on the grill. Next you will peel and deviate the shrimp and make the marinade and divide it in half. Whisk together the 1 cup oil, 1 jalapeño, 1 tablespoon salt ,1/2 cup honey, 1 tablespoon lime zest, 1 lime juiced ,1/2 cup cilantro. You will only want to marinade the shrimp for about an hour you don’t want the lime juice to cook the shrimp. Next you will make the skewers I did two kinds shrimp and pineapple only and some with veggies. Make sure that your grill is really hot they take about 10 minutes to cook.

    Peach Chipotle Grilled Pork

    Peach Chipotle Grilled Pork is a favorite both at events and at home. Its very easy to make and is just a few ingredients. If you would like to use dried chipotle then you can boil a cup of water drop in the chilies until they are soft you can either use them whole or put them in a blender. Chipotle has a very smokey flavor we also use smoked salt. You can find smoked salt at your local grocery store usually in the gourmet section, cheese section or near the meat department or online. Peaches are a great fruit for grilling we sliced these but you can also just cut them in half and grill them that way as well. Peach Chipotle Grilled Pork is something easy to make on any night of the week!     Ingredients

    4 pork chops

    2 peaches

    1/2 cup chipotle dried or canned

    1 tablespoon honey

    Smoked salt

    Pepper

    Instructions

    Salt and pepper your pork chops, Heat grill, slightly oil grill, cut peaches. First start to grill your pork chops. when they are about 5 minutes away from being done grill peaches, drizzel peaches with honey lay them on top of each pork chop put a small amount of chilies on each one smother them together it will make its own sauce.     Strawberry Chicken

    Strawberry Chicken! This chicken is marinated in a strawberry balsamic marinade, grilled on a grill! and finished with balsamic syrup and fresh strawberries with basil.

    Ingredients

    Balsamic marinade

    1 cup fresh strawberry

    1/2 cup balsamic vinegar

    1 Tablespoon brown sugar

    1/2 cup olive oil

    1 tsp sea salt

    1 tsp pepper

    1 tsp garlic

    4 peices of chicken you can use any kind of chicken it doesn’t have to be chicken breast

    1 bunch basil

    1 cup fresh strawberries

    Balsamic Glaze (for drizziling you can buy balsamic syrup at most grocery stores)

    if you want to make it  It only takes 15 minutes and it’s much healthier than buying it from the store (which usually has unnecessary stabilizers, emulsifiers and chemical colorings).

    1 cup balsamic vinegar

    1 tablespoon honey

    Instructions

    Blend all of marinade in blender place chicken in a zip lock marinade at least 4 hours or overnight.

    Heat grill, cook 25 minutes depending on what kind of chicken you have.

    Balsamic glaze

    Add the balsamic vinegar and honey to a small pot. Bring it to a boil, then reduce the heat and simmer for 10-15 minutes or until the sauce coats the back of a spoon.

    refrigerate after use sauce will thicken as it cools.

    A little bit goes a long ways drizzle over cooked chicken

    dice strawberries and basil fold together and put on top of the chicken!

    Yum so good!

    Notes

    You can also use your favorite balsamic vinaigrette and just add strawberries for the marinade. This can also be baked 400 25 minutes. But I enjoy the smokey flavor from the grill.
