    Brussels Sprouts Breakfast

    Brussels Sprouts Breakfast is probably not the first thing that comes to mind when you think go breakfast. This is a really great way to use them for something other than a side dish. We use bacon in this recipe you could also substitute panchetta or you could leave the meat out and it would be gluten free and vegetation. You could also add parmesan or another kind of cheese. We are leaving it fairly simple this time!

    But so so good another thing is I’m kinda in love with purple potatoes right now but you can use any kind. Also I’m using a small cast iron but you can use a larger one if you have more people to eat, you can use any kind of pan even a sheet pan if you want to make the entire thing in the oven you can also do that.

    if you would like to add your skillett to the oven to cook your eggs you can I would cook it at 400.

    Brussels Sprouts Breakfast

    Ingredients

    2 eggs

    1 cup brussels sprouts

    1 cup purple potatoes

    1 teaspoon garlic

    1/4 cup onion or 2 tablespoons of chives

    2 slices bacon

    1 sprig fresh thyme

    sea salt

    fresh ground pepper

    1 tablespoon maple syrup

    1 tablespoon dijon mustard

    Instructions

    Chop your potatoes and Brussel sprouts. Heat your small cast iron pan. Cut bacon unto 2 inch pieces cook in cast iron pan remove bacon, at this point if your not using bacon you can use olive oil or butter. Sauté potatoes and onions season with salt pepper garlic and thyme 7 minutes. In a separate bowl toss brussel sprouts with mustard and maple, add them to the potatoes cook about 5 to 7 minutes they will caramelize. Add bacon back in sauté eveything together. Next make 2 wells in your sauté and crack your eggs right in them. Cook your eggs to how you like them you pan also put them in the oven if you would like or finish them stovetop.
